Patisserie Valerie

Patisserie Valerie’s growth has been phenomenal over the past eight years, the rise in store numbers has gone from eight in London to over 150 across Britain today. These havens of self-indulgence have a reputation for serving the best quality cakes and patisserie, continental breakfasts, lunches, the finest teas and coffees and an atmosphere that is unique to each location.

The chain floated on AIM in May 2014 and new stores have been opening on a monthly basis. It actually goes back much further than the recent expansion, which has seen the chain quickly open in just about every city centre. Patisserie Valerie was actually first opened in Frith Street in London’s Soho in 1926 by Belgian born Madam Valerie. She came to London on a mission to introduce fine Continental patisserie to the English. It was an instant success.

After falling victim to the blitz during the Second World War, it was reborn at Old Compton Street in premises which remain to this day, still evoking what's been described as a quirky Toulouse-Lautrec vibe.

Managing such a fast growing multi-site operation comes with its own challenges, yet by using MCRs’ Symphony EPOS system this gives the chain a smooth running process. The Symphony software is hosted by MCR Systems, delivering a scalable solution that can be easily and rapidly rolled out across the expanding multi brand Patisserie Valerie business. Management can log on anywhere via the internet, 24/7 for real-time, on-demand, access to data.

Matthew Gatter, Managing Director at MCR Systems commented, “The current growth rate for Patisserie Valerie is 20 new stores per year, and with this level of growth it’s proved vital that the business invested in Symphony early, providing the right tools to manage their offer and deliver real-time sales and stock information to the management team.

The management team receive up to the minute information, critical for a business to understand the movements and the KPI’s and to make sure they are being adhered to. I know their CEO is on top of the business and gets a daily report at 7am with sales from all stores for the previous day as well as weekly sales and margin reports.”

The latest SymPOS Touchscreen Tills from MCR Systems have proved popular with staff and management. The enhanced Table Plan with Table management indicators ensures service cycles are adhered to and allows Tabs to be stored against guests. The screens are easily configurable with different button sizes and styles, and with simple to navigate menus to lead the operator through a transaction, with prompts for menu choices, cooking instructions and up-selling opportunities, improving efficiency, productivity and customer service.

Another recent addition to the system for Patisserie Valerie is Symphony Stock Manager which will be used to analyse past sales performance and apply predictive ordering techniques, as well as manage and reduce wastage.
